Honey Cakes

This Honey Cake recipe is a wonderful match with our new Woodland Apothecary™ teas.

Honey Cakes

Ingredients
2 cups Flour
3 tsp Baking Powder

1 tsp Salt
5 Tblsp Unsalted Butter (cut into small pieces)  See note below
5 Tblsp Honey
2 Eggs
1/2 cup Heavy Whipping Cream

Method
Sift flour, baking powder and salt together.  Dribble the honey over this.  I warmed up the honey so it would flow.  Drop in pieces of butter, toss so honey is covered by flour mixture.  Use fingertips to rub the honey butter until crumbly. (It will not be sticky yet!)  Beat eggs in the cream, add to bowl and stir.  (Now it will be sticky).  Lay on parchment covered baking sheet. 

Turn onto generously floured board.  Sprinkle with more, flour.  Pat to ½ to 3/4” thickness.  Use a round cookie cutter or glass to cut in rounds. 

NOTE:  The second time I made these, I just dropped a mound on parchment paper, flattened down the top with a spoon and brushed a little honey over the top.

Bake 12-14 minutes at 350 degrees F or until lightly golden and firm.  Enjoy with butter and jelly.

Notes:  The original recipe called for 4 Tblsps of butter.  I ended up using 5
             I use fresh honey from a beekeeper.  Try a wildflower or orange blossom honey.
             These go great with a light flavored jelly such as a peach jelly.
